  • 1 head fresh romaine lettuce, chopped
  • 1 cup freshly grated Parmesan cheese
  • 3 garlic cloves, minced
  • 1/3 cup olive oil
  • 2 tsp Dijon mustard
  • 2 tbsp freshly squeezed lemon juice
  • 4 cups crusty bread, cubed (day-old preferred)
  • Salt and pepper to taste
  • 1 tsp Worcestershire sauce

Instructions

  1. Preheat the grill or skillet over medium heat. Season chicken breasts with salt and pepper. Cook until golden brown and cooked through (about 6-7 minutes per side).
  2. For the croutons, toss bread cubes with olive oil, minced garlic, salt, and pepper. Bake at 375°F (190°C) for about 15 minutes or until golden brown and crunchy.
  3. In a bowl, whisk together olive oil, Dijon mustard, lemon juice, minced garlic, Worcestershire sauce, salt, and pepper until creamy.
  4. In a large bowl, combine chopped romaine with half of the Parmesan cheese. Drizzle dressing over the salad while gently tossing until well coated.
  5. Slice cooked chicken thinly and place on top of the salad. Add croutons and sprinkle remaining Parmesan cheese before serving immediately.
