- 1 stalk celery (chopped)
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 1 tsp dried thyme
- 1 tsp dill weed
- Salt and pepper to taste
- 1 cup almond milk (unsweetened)
- 2 tsp baking powder
- 2 tbsp olive oil or vegan butter
Instructions
- In a large pot over medium heat, melt olive oil or vegan butter. Add chopped onions and minced garlic; sauté until translucent, about 5 minutes.
- Add diced carrots and chopped celery; cook until softened, around another 5 minutes.
- Pour in vegetable broth, dried thyme, dill weed, salt, and pepper; bring to a gentle simmer.
- In a mixing bowl, combine flour, baking powder, salt, almond milk, and melted vegan butter until just mixed.
- Drop spoonfuls of dumpling dough into the simmering broth. Cover and steam for 15–20 minutes until fluffy.
- Gently fold in vegan chicken during the last few minutes of cooking to warm through.
