  • 1 can (15 oz) kidney beans, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp chili powder
  • 1 cup sweet cornmeal
  • 1 tbsp baking powder
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese (divided)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish.
  2. In a skillet over medium heat, brown the ground beef for about 7-10 minutes. Drain excess fat.
  3. Add chopped onions and minced garlic; sauté until translucent (3-4 minutes).
  4. Stir in kidney beans, diced tomatoes, chili powder, salt, and pepper. Simmer for 10 minutes.
  5. In another bowl, combine cornmeal, baking powder, milk, and half the cheese until smooth.
  6. Layer the chili mixture in the greased dish and pour cornbread batter on top.
  7. Bake for 25-30 minutes or until golden brown.
