  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 medium carrots, sliced thinly
  • 1 cup frozen peas
  • 1 medium onion, diced
  • 23 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup pearl barley
  • 1 tsp dried thyme
  • Salt & pepper to taste

Instructions

  1. Chop the chicken into bite-sized pieces and dice the onion and carrots.
  2. In a large pan over medium heat, melt 1 tablespoon of butter. Sauté the onions and garlic until soft, about 3-5 minutes.
  3. Add the diced chicken with salt and pepper; cook until lightly browned.

  5. Pour in chicken broth and heavy cream; bring to a simmer.
  6. Stir in thyme and barley; cover and cook on low for about 30 minutes until barley is tender.
