  • 2 stalks celery, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream or milk
  • 1 tsp dried thyme
  • 1 tsp dried dill
  • Salt and pepper to taste
  • ½ cup cooked bacon bits (optional)

Instructions

  1. Prepare your ingredients by washing and peeling the potatoes. Dice them and chop the onions, carrots, and celery.
  2. In a skillet over medium heat, sauté onions and garlic until fragrant. This enhances their flavor.
  3. Transfer the sautéed mixture to the crockpot. Add potatoes, carrots, celery, vegetable broth, thyme, dill, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until vegetables are tender.
  5. About 30 minutes before serving, stir in cream or milk. For a thicker soup, mash some potatoes against the sides of the crockpot.
