  • 1 cup kidney beans, canned
  • 1 cup black beans, canned
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 2 tbsp chili powder
  • 4 cups vegetable broth
  • ¼ cup cilantro, chopped (for garnish)
  • ½ cup sour cream or Greek yogurt (for topping)
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients: Chop the onion and garlic finely; cube the pumpkin.
  2. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onions; cook until translucent. Add garlic; sauté until fragrant.
  3. Add pumpkin & spices: Stir in pumpkin cubes, cumin, and chili powder. Cook for about five minutes.
  4. Pour in broth & beans: Add vegetable broth along with kidney and black beans; stir well. Bring to a simmer.
  5. Simmer away: Let the chili cook uncovered on low heat for at least 30 minutes, stirring occasionally.
  6. Taste & serve: Adjust spices as needed before serving with cilantro and sour cream or Greek yogurt on top.
