Instructions
- Preheat the oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
- Boil salted water in a large pot. Add pasta and cook according to package instructions until al dente; reserve some pasta water before draining.
- In a bowl, whisk together tahini, minced garlic, lemon juice, salt, pepper, and reserved pasta water until smooth.
- In a large bowl, combine the cooked pasta with roasted butternut squash. Pour tahini sauce over and mix gently until coated. Adjust consistency with more pasta water if needed.
