  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme (or 1 tbsp fresh thyme)
  • 1 cup heavy cream
  • 16 oz store-bought gnocchi
  • Salt & pepper to taste

Instructions

  1. Prepare by chopping all vegetables and gathering ingredients.
  2. In a large pot over medium heat, sauté onions, garlic, celery, and carrots in olive oil until softened.
  3. Add chicken breasts and chicken broth; stir in thyme. Bring to a simmer for about 20 minutes.
  4. Remove chicken, shred it with forks, then return it to the pot.
  5. Stir in gnocchi and heavy cream; cook until gnocchi float.
  6. Season with salt and pepper to taste before serving.
