  • 34 boneless, skinless chicken breasts
  • 8 oz penne or rotini pasta
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup fresh spinach (optional)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, add olive oil. Season chicken with salt and pepper, then cook for about 6-7 minutes per side until golden brown. Remove and chop into bite-sized pieces.
  3. Boil water in a pot, cook pasta according to package instructions until al dente, then drain.
  4. In a mixing bowl, combine pasta, chopped chicken, Alfredo sauce, half of the mozzarella cheese, and spinach (if using). Mix well.
  5. Pour into the baking dish and top with remaining mozzarella and Parmesan cheese.
  6. Bake for 25-30 minutes until bubbly and golden brown.
