  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 8 flour or corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 can (4 oz) canned green chiles
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup sour cream
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper, then cook until golden brown in a skillet over medium heat. Shred the cooked chicken using two forks.
  3. In a bowl, combine shredded chicken, minced garlic, green chiles, 1 cup of cheese, and half the enchilada sauce.
  4. Fill each tortilla generously with the mixture and roll tightly. Place seam-side down in the baking dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas and top with the remaining cheese.
  6. Bake for about 20 minutes until bubbly and golden brown. Serve topped with sour cream and fresh cilantro.
