  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz cream cheese (softened)
  • 1 cup fresh spinach (chopped)
  • 1 cup panko breadcrumbs
  • 2 tsp garlic powder
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Flatten each chicken breast to about 1/4-inch thickness using a meat mallet.
  3. In a bowl, mix softened cream cheese with chopped spinach, garlic powder, salt, and pepper until well blended.
  4. Spread the filling evenly over each chicken breast and roll tightly from one end to the other. Secure with toothpicks if needed.
  5. Brush each roll with olive oil and coat in panko breadcrumbs.
  6. Place seam-side down in the baking dish and bake for 25-30 minutes until golden brown and internal temperature reaches 165°F (74°C).
