- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz cream cheese (softened)
- 1 cup fresh spinach (chopped)
- 1 cup panko breadcrumbs
- 2 tsp garlic powder
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
- Flatten each chicken breast to about 1/4-inch thickness using a meat mallet.
- In a bowl, mix softened cream cheese with chopped spinach, garlic powder, salt, and pepper until well blended.
- Spread the filling evenly over each chicken breast and roll tightly from one end to the other. Secure with toothpicks if needed.
- Brush each roll with olive oil and coat in panko breadcrumbs.
