  • 4 boneless, skinless chicken breasts
  • 8 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1 cup fresh spinach (chopped)
  • 1 tsp garlic powder
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Pound chicken breasts to about half an inch thick.
  2. In a bowl, mix cream cheese, cheddar cheese, spinach, garlic powder, salt, and pepper until smooth.
  3. Spread filling on each chicken breast and roll tightly. Secure with toothpicks if needed.
  4. Dip each roll in olive oil and coat with panko breadcrumbs.
  5. Place in a greased baking dish and bake for 25-30 minutes until golden brown.
