  • 1 cup Andouille sausage, sliced
  • 1 cup boneless chicken thighs, diced
  • 1 cup bell peppers (mixed colors), chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes in juice
  • 2 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning
  • 1 cup long-grain white rice
  • 1 cup shrimp, peeled and deveined (optional)

Instructions

  1. Chop bell peppers and onion into bite-sized pieces.
  2. In a large pot over medium heat, sauté Andouille sausage and chicken thighs until browned.
  3. Remove meat; add onion and bell peppers to the pot. Sauté until softened (about 5 minutes).
  4. Stir in minced garlic; cook for 30 seconds.
  5. Add canned tomatoes and Cajun seasoning; mix well.
  6. Stir in rice, then pour chicken broth over the mixture; bring to a boil.
  7. Reduce heat to low, cover tightly, and simmer for about 20 minutes until rice is cooked through.
