  • 2 medium sweet potatoes (about 500g), peeled and cubed
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 red onion, diced
  • 1 bell pepper (any color), diced
  • 4 cups fresh spinach, washed and dried
  • 1/2 cup crumbled feta cheese (optional)
  • 3 tbsp honey
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 425°F (220°C). Toss cubed sweet potatoes with olive oil, salt, and pepper.
  2. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  3. While roasting, chop red onion and bell pepper into bite-sized pieces.
  4. In a large bowl, combine roasted sweet potatoes with chopped veggies and spinach. Add feta if desired.
  5. Drizzle honey and lemon juice over the salad and gently toss to combine.
  6. Serve chilled or at room temperature.
