  • 6 tbsp cold unsalted butter, cubed
  • 1/4 cup granulated sugar (plus extra for sprinkling)
  • 1/4 tsp salt
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Dough: In a bowl, combine flour, cornmeal, and salt. Cut in cold butter until crumbly. Gradually add buttermilk until a dough forms.
  2. Chill: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Preheat & Roll Out: Preheat oven to 400°F (200°C). On a floured surface, roll out chilled dough into a rough circle (about 12 inches wide).
  4. Create the Filling: Mix berries with sugar, lemon juice, and vanilla in a bowl; let sit for 10 minutes.
  5. Assemble Galette: Transfer dough onto parchment paper. Spoon berry mixture into the center, leaving edges bare.
