  • 2 tbsp fresh sage (chopped)

  • ½ cup goat cheese or feta (crumbled) – optional

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and cube the butternut squash. Slice the onions thinly.
  3. In a skillet over medium heat, add olive oil and sliced onions. Cook until golden brown, about 15 minutes.
  4. Add cubed butternut squash, sage, salt, and pepper; cook for an additional 10 minutes until squash is tender.
  5. Roll out the puff pastry on a floured surface and fit into a tart pan. Prick the base with a fork.
  6. Spoon the onion and squash mixture into the pastry shell; sprinkle cheese on top if desired.
  7. Bake for 25-30 minutes or until golden brown.
