  • 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth
  • 1 cup tzatziki sauce
  • 2 tbsp fresh dill, chopped
  • Juice of 1 lemon
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a large baking dish with cooking spray or olive oil.
  3. Evenly spread uncooked rice across the bottom of the dish. Pour chicken broth over the rice.
  4. Place the chicken breasts on top of the rice, seasoning with salt, pepper, garlic powder, and lemon juice.
  5. Spoon tzatziki sauce generously over the chicken and sprinkle fresh dill on top.
  6. Cover tightly with aluminum foil and bake for about 45 minutes or until chicken is cooked through.
