  • 4 oz rice noodles
  • 1 cucumber, sliced
  • 2 medium carrots, shredded
  • 1/4 cup fresh cilantro, chopped
  • Sriracha sauce to taste
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar (unseasoned)
  • 2 tbsp honey or agave syrup
  • 3 garlic cloves, minced
  • 1 tsp toasted sesame oil

Instructions

  1. Prepare the marinade by mixing soy sauce, garlic, honey, and sesame oil in a bowl.
  2. Marinate chicken thighs in the mixture for at least 30 minutes.
  3. Cook rice noodles according to package instructions until al dente.
  4. In a skillet over medium heat, sauté marinated chicken for about 5-7 minutes per side until golden brown and cooked through.
