  • 1 cup orzo pasta
  • 2 fresh lemons (juiced)
  • 4 garlic cloves (minced)
  • 4 cups low-sodium chicken broth
  • 2 cups fresh spinach or kale
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried oregano

Instructions

  1. Heat olive oil in a large pot over medium heat. Season chicken breasts with salt and pepper and sauté until golden brown (5-7 minutes per side). Remove and set aside.
  2. Add minced garlic to the pot; sauté until fragrant (about 1 minute).
  3. Stir in orzo pasta and toast slightly for about 2 minutes.
  4. Pour in chicken broth and lemon juice, scraping up any bits from the pot. Bring to a gentle boil.
  5. Reduce heat, return chicken to the pot, cover, and simmer for about 10-12 minutes until orzo is al dente.
  6. Add spinach or kale during the last few minutes of cooking to wilt.
  7. Taste and adjust seasoning as needed before serving warm with lemon wedges.
