  • 2 lbs ripe tomatoes, halved
  • 1 cup fresh basil leaves, chopped
  • 1 medium onion, sliced
  • 4 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare tomatoes by washing and halving them. Slice the onion and mince the garlic.
  2. On a baking sheet, toss halved tomatoes and sliced onions with olive oil, salt, and pepper. Roast for 25-30 minutes until caramelized.
  3. In a large pot over medium heat, add olive oil and sauté minced garlic until fragrant. Add chopped basil and sauté for another minute.
  4. Transfer roasted tomatoes to the pot along with vegetable broth; stir well to combine.
  5. Blend the mixture until smooth using an immersion blender or regular blender.
