  • 2 cans (15 oz each) organic chickpeas, rinsed and drained
  • 1 can (28 oz) fire-roasted diced tomatoes
  • 1 large sweet onion, diced
  • 4 garlic cloves, minced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups low-sodium vegetable broth
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt & pepper to taste

Instructions

  1. Dice the onions, carrots, and celery.
  2. In a skillet over medium heat, warm olive oil. Sauté onions until translucent (about 5 minutes), then add minced garlic and cook until fragrant.
  3. Transfer sautéed vegetables to the crockpot. Add chickpeas, diced tomatoes, carrots, celery, vegetable broth, and spices. Stir well.
  4. Cover and set the crockpot on low for 6-8 hours or high for 3-4 hours.
  5. Taste before serving and adjust seasoning as needed.
