- 1 can (28 oz) fire-roasted diced tomatoes
- 1 large sweet onion, diced
- 4 garlic cloves, minced
- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 4 cups low-sodium vegetable broth
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp dried thyme
- Salt & pepper to taste
Instructions
- Dice the onions, carrots, and celery.
- In a skillet over medium heat, warm olive oil. Sauté onions until translucent (about 5 minutes), then add minced garlic and cook until fragrant.
- Transfer sautéed vegetables to the crockpot. Add chickpeas, diced tomatoes, carrots, celery, vegetable broth, and spices. Stir well.
- Cover and set the crockpot on low for 6-8 hours or high for 3-4 hours.
