  • 3 cloves garlic, minced
  • 28 oz can fire-roasted crushed tomatoes
  • 4 cups low-sodium beef broth
  • 8 oz lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté the chopped onion and minced garlic until fragrant and translucent.
  2. Add the ground beef to the pot, breaking it apart as it cooks. Stir until browned (about 5-7 minutes).
  3. Pour in crushed tomatoes and beef broth; stir well to combine.
  4. Add broken lasagna noodles and Italian seasoning. Simmer for about 15 minutes until noodles are tender.
  5. Stir in ricotta cheese until fully incorporated, then sprinkle shredded mozzarella on top and let melt before serving.
