  • 2 medium sweet potatoes (about 400g), diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium red onion, diced
  • 4 cloves garlic, minced
  • 1 cup bell peppers (mixed red and green), chopped
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 4 cups low-sodium vegetable broth
  • 2 tbsp lime juice, freshly squeezed

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced red onions and minced garlic; sauté until golden brown.
  2. Stir in diced sweet potatoes and chopped bell peppers; cook for about five minutes until slightly softened.
  3. Add chili powder and ground cumin, then stir in the canned diced tomatoes. Simmer for a couple of minutes.
  4. Pour in vegetable broth and black beans; bring to a gentle boil.
  5. Reduce heat to low, cover the pot, and simmer for 25-30 minutes until sweet potatoes are tender yet hold their shape.
  6. Remove from heat and stir in freshly squeezed lime juice before serving.
