  • 2 cups fresh pineapple chunks

  • 1/2 cup ketchup
  • 1/4 cup soy sauce (low-sodium)
  • 1/4 cup brown sugar
  • 2 tbsp rice vinegar
  • Salt and pepper to taste
  • Chopped green onions and toasted sesame seeds for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper.
  3. In a bowl, combine ketchup, soy sauce, brown sugar, garlic, and rice vinegar to create the teriyaki sauce.
  4. Add pineapple chunks to the sauce mixture.

  6. Bake for 25–30 minutes until chicken reaches an internal temperature of 165°F (75°C).
