- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1 large egg
- 1/4 cup unsalted butter (melted)
- 1/2 cup chocolate chips (semi-sweet or dark)
- Streusel Topping: 1/4 cup brown sugar, 1/2 cup flour, 2 tbsp cold butter
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or spray with cooking spray.
- In a large bowl, mash bananas until smooth. Stir in melted butter, granulated sugar, brown sugar, and the egg until well blended.
- Gently fold in flour, baking powder, and salt until just combined. Be careful not to overmix.
- Fold in chocolate chips evenly throughout the batter.
- For the streusel topping, mix brown sugar, flour, and cold butter in a small bowl until crumbly.
- Fill each muffin cup about two-thirds full with batter and top generously with streusel.
- Bake for 18-20 minutes or until golden brown; a toothpick inserted should come out clean.
