Ingredients

  • 8 slices thick-cut bacon
  • 1 cup cherry tomatoes (halved)
  • 1 cup romaine lettuce (washed and cut into bite-sized pieces)
  • 1/4 cup mayonnaise
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange bacon strips in a single layer. Bake for 15-20 minutes until crispy.
  2. While bacon cooks, wash and dry romaine lettuce; cut into small pieces.
  3. Once bacon is cooked, let it cool slightly and slice cherry tomatoes in half.
  4. In a bowl, mix mayonnaise with salt and pepper. Optionally add garlic powder for extra flavor.
  5. Assemble each bite by placing a piece of lettuce on a platter, topping it with half a cherry tomato and a piece of bacon. Secure with a toothpick if desired.
  6. Serve immediately and enjoy!
