  • 1 cup Bulgogi beef (pre-marinated)
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup sharp cheddar cheese (shredded)
  • 2 green onions (chopped)
  • 2 tbsp low-sodium soy sauce
  • 1 tsp garlic powder
  • Vegetable oil (for frying)

Instructions

  1. Cook Arborio rice according to package instructions; let cool completely.
  2. Mix Bulgogi beef with soy sauce, garlic powder, and green onions; marinate for at least 30 minutes.
  3. Sauté the beef mixture in vegetable oil over medium-high heat until browned (5-7 minutes); cool slightly.
  4. Take about two tablespoons of cooled rice, flatten it, add a spoonful of bulgogi filling and cheese in the center, then fold around to form a ball.
  5. Roll each ball in beaten eggs and then panko breadcrumbs.
  6. Heat vegetable oil in a deep pan over medium heat; fry arancini until golden brown (3-4 minutes).
  7. Remove from oil and let drain on paper towels; serve warm.
