  • 1 tbsp fresh ginger, grated
  • 1 cup bell peppers, diced (mixed colors)
  • 1 cup unsalted cashews (toasted if desired)
  • ¼ cup low-sodium soy sauce
  • 1 tbsp honey (or sugar)
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil

Instructions

  1. Prepare your ingredients by cutting the chicken into bite-sized pieces and dicing the bell peppers. Mince the garlic and grate the ginger.
  2. Marinate the chicken in a bowl with half the soy sauce mixed with cornstarch for about 15 minutes.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add minced garlic and ginger; sauté until fragrant (about 30 seconds).
  4. Add diced bell peppers to the skillet and cook until slightly softened.
  5. Incorporate marinated chicken into the skillet; cook until golden brown and cooked through (approximately 5-7 minutes).
  6. Stir in cashews along with remaining soy sauce and honey; mix well for about 2 minutes to blend flavors.
