  • 2 cups fresh cherries, pitted and halved
  • 3/4 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup unsalted butter, cold and cubed
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a medium bowl, mix cherries with 1/4 cup sugar and lemon juice. Set aside.
  3. In another bowl, combine flour, oats, remaining sugar (1/2 cup), baking powder, and salt. Cut in cold butter until crumbly.
  4. Press half of the crumble mixture into the baking dish. Spread cherry filling evenly on top and sprinkle remaining crumble mixture over cherries.
  5. Bake for 30-35 minutes or until golden brown. Cool completely before slicing into squares.
