  • 2 ripe avocados
  • 4 large flour tortillas
  • 1 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar or Monterey Jack cheese
  • ½ cup sour cream or Greek yogurt (optional)

Instructions

  1. Season the chicken breasts with chili powder, garlic powder, cumin, salt, and pepper. Cook in a skillet over medium heat for about 6-7 minutes per side until golden brown and cooked through.
  2. Let the chicken rest for a few minutes before shredding it with two forks.
  3. In a bowl, mash the avocados with lime juice and chopped cilantro until smooth but slightly chunky.
  4. Lay out the tortillas flat and layer the shredded chicken down the center. Top with mashed avocado, cheese, and sour cream if desired.
