  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 ripe avocados
  • 4 large flour tortillas
  • 1/2 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 2 tsp cumin
  • 2 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Season chicken breasts with cumin, chili powder, salt, and pepper; marinate for at least 30 minutes.
  2. Heat olive oil in a skillet over medium heat and cook chicken for about 6-7 minutes on each side until golden brown and fully cooked.
  3. While the chicken cools slightly, chop avocados and cilantro; mix with lime juice in a bowl.
  4. Shred the cooked chicken using two forks.
  5. Lay out tortillas, layer shredded chicken down the center, add avocado mixture, salsa, and cheese.
  6. Fold edges of tortillas tightly around the filling and roll to create burritos.
