  • 2 large eggs, at room temperature
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1/4 cup cinnamon-sugar mixture (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time along with vanilla extract.
  3. In another bowl, whisk together flour, baking powder, and ground cinnamon. Gradually mix dry ingredients into the wet mixture until just combined.
  4. For the filling, beat cream cheese, granulated sugar, egg, and vanilla in a separate bowl until smooth.
  5. Scoop cookie dough into balls and flatten slightly. Place about a teaspoon of cheesecake filling in the center and fold the dough around it.
  6. Roll each cookie ball in the cinnamon-sugar mixture before placing them on prepared baking sheets.
  7. Bake for 12-15 minutes or until edges are golden brown but centers remain soft. Allow to cool slightly before serving.
