  • 34 ripe bananas (about 1 ½ cups mashed)
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter (melted)
  • 2 tsp vanilla extract
  • ½ cup nuts or chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a large bowl, mash ripe bananas until smooth. Stir in melted butter, granulated sugar, brown sugar, eggs, and vanilla until well combined.
  3. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Gradually add dry ingredients to the banana mixture; stir gently until just combined.
  5. Pour half of the batter into the prepared pan. Sprinkle with cinnamon sugar (mix of cinnamon and granulated sugar) then layer the remaining batter on top. Swirl with a knife for a marbled effect.
  6. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean. Let it cool before slicing.
