  • 4 boneless, skinless chicken breasts
  • 24 oz frozen pierogi (potato-cheese recommended)
  • 4 cups low-sodium chicken broth
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 celery stalks, diced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 8 oz cream cheese

Instructions

  1. Chop the onion, carrots, and celery into bite-sized pieces.
  2. In a skillet over medium heat, sauté the onions in olive oil until golden brown.
  3. Transfer sautéed onions to the crockpot and add chicken breasts along with enough broth to cover (about 4 cups).
  4. Add chopped carrots, celery, frozen pierogi, garlic, thyme, salt, and pepper; stir gently.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  6. About 30 minutes before serving, stir in cream cheese until melted and creamy.
