  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 2 cups elbow macaroni (uncooked)
  • 1 (14.5 oz) can diced tomatoes (fire-roasted preferred)
  • 1 cup shredded cheddar cheese
  • 1 cup bell peppers (chopped)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups low-sodium chicken broth
  • Sour cream or Greek yogurt for serving

Instructions

  1. In a skillet over medium heat, brown the ground beef and chopped onions until the meat is crumbly. Drain excess fat.
  2. Stir in taco seasoning, diced tomatoes, and chicken broth until well combined.
  3. Transfer the mixture to a crockpot and add uncooked macaroni.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until pasta is tender.
  5. About 15 minutes before serving, sprinkle shredded cheddar cheese on top and cover until melted.
  6. Serve hot, garnished with sour cream or Greek yogurt.
