  • 8 oz fettuccine pasta
  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 1 cup Gruyère cheese, shredded
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot and add a pinch of salt. Cook the fettuccine until al dente according to package instructions.
  2. In a skillet over medium heat, melt butter with olive oil. Add sliced onions and cook slowly for about 20 minutes until they are golden brown.
  3. Stir in minced garlic and thyme; cook for another minute until fragrant.
  4. Pour in beef broth and season with salt and pepper. Bring to a simmer.
  5. Drain pasta (reserving some water) and toss it into the skillet with the sauce. Mix well, adding reserved pasta water for desired consistency.
  6. Top with shredded Gruyère cheese and cover briefly until melted. Serve hot.
