  • 1 medium zucchini (sliced into half-moons)

  • 4 tbsp unsalted butter
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Fresh basil or parsley (for garnish)
  • Salt and pepper (to taste)

Instructions

  1. Cook the fettuccine in salted boiling water according to package directions until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes per side until golden brown and cooked through. Remove from skillet and let rest before slicing.
  3. In the same skillet, add minced garlic and sauté until fragrant (about 1 minute). Then add sliced zucchini and cook for an additional 3-4 minutes until tender but still slightly crisp.
  4. Return sliced chicken to the skillet, then add butter and grated Parmesan cheese. Stir until butter is melted and the sauce is creamy.
