  • 1 pie crust (store-bought or homemade)
  • 5 large eggs
  • 1 cup goat cheese (crumbled)
  • 2 cups fresh spinach (packed)
  • 1/2 cup sun-dried tomatoes (oil-packed, chopped)
  • 1/2 cup heavy cream
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp fresh thyme (or basil, chopped)
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Place the pie crust in a pie dish and crimp the edges.
  2. In a skillet, heat olive oil over medium heat. Sauté diced onion until translucent, then add minced garlic and spinach until wilted.
  3. In a bowl, whisk eggs with heavy cream until smooth. Stir in crumbled goat cheese, sun-dried tomatoes, salt, pepper, and herbs.
  4. Fold the sautéed spinach mixture into the egg mixture gently.
  5. Pour the filling into the prepared crust and spread evenly.
  6. Bake for 30-35 minutes or until set and golden on top. Let cool slightly before slicing.
