- 2 cloves garlic (minced)

Instructions
- Preheat oven to 375°F (190°C). Place the pie crust in a pie dish and crimp the edges.
- In a skillet, heat olive oil over medium heat. Sauté diced onion until translucent, then add minced garlic and spinach until wilted.
- In a bowl, whisk eggs with heavy cream until smooth. Stir in crumbled goat cheese, sun-dried tomatoes, salt, pepper, and herbs.
- Fold the sautéed spinach mixture into the egg mixture gently.
- Pour the filling into the prepared crust and spread evenly.
