  • 4 boneless, skinless chicken breasts
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 tsp dried oregano
  • 2 cups fresh spinach (or 1 cup frozen)
  • 1/4 cup pine nuts, toasted (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. In a bowl, combine olive oil, garlic, lemon juice, oregano, salt, and pepper. Marinate chicken breasts for at least 30 minutes.
  3. Layer cherry tomatoes, olives, spinach, and any additional veggies over the marinated chicken in the baking dish.
  4. Sprinkle crumbled feta on top.
  5. Bake for 35-40 minutes until chicken is cooked through and golden brown.
  6. Let rest for 5 minutes before serving; garnish with toasted pine nuts if desired.
