  • 1 large egg
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 2 green onions, chopped (for garnish)
  • 2 tbsp toasted sesame seeds (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a large baking dish.
  2. In a bowl, combine ground beef, breadcrumbs, egg, minced garlic, and seasonings. Mix gently until well combined.
  3. Shape the mixture into small meatballs (about 1 inch in diameter) and set aside.
  4. In another bowl, whisk together honey, soy sauce, and minced garlic for the sauce.
  5. Spread uncooked rice evenly in the greased baking dish and pour vegetable broth over it.
  6. Nestle the meatballs into the rice layer and drizzle half of the honey garlic sauce over everything. Gently toss to combine without breaking the meatballs.
  7. Cover with aluminum foil and bake for 30 minutes; then remove foil and bake an additional 15-20 minutes until meatballs are cooked through and rice is fluffy.
  8. Let sit for five minutes before serving; garnish with green onions and sesame seeds.
