  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 tbsp pure honey
  • 2 tbsp fresh sage, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • ¼ cup pine nuts (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Cut the butternut squash in half lengthwise, scoop out the seeds, and drizzle with olive oil, salt, and pepper.
  3. Roast the squash cut side down on a baking sheet for 25-30 minutes until tender.
  4. While roasting, season chicken breasts with salt and pepper. In a skillet, heat olive oil over medium heat and cook chicken until browned (about 5-6 minutes per side), ensuring it's cooked through.
  5. Drizzle honey over the cooked chicken and sprinkle with chopped sage; simmer for 2-3 minutes.
  6. Remove squash from the oven, flip cut side up, fill each half with shredded chicken mixture, and top with toasted pine nuts if desired.
  7. Return to the oven for another 10 minutes to warm through before serving.
