  • 2 cups fresh broccoli florets
  • 1 cup cauliflower rice
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup heavy cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sear the seasoned chicken breasts for about 6-8 minutes on each side until golden brown. Let cool before shredding.
  3. In a large bowl, combine broccoli florets and cauliflower rice; mix well.
  4. In another bowl, whisk together heavy cream, garlic powder, onion powder, Italian herbs, salt, and pepper until smooth.
  5. Fold shredded chicken into the veggie mixture and pour the cream sauce over everything; stir until evenly coated.
  6. Transfer to the prepared baking dish and sprinkle cheddar cheese on top.
  7. Bake for 30-35 minutes or until the cheese is bubbly and golden brown.
