  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 4 medium sweet potatoes, peeled and cubed (about 2 lbs)
  • 1/4 cup Dijon mustard
  • 1/4 cup pure maple syrup
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss sweet potato cubes with olive oil, salt, pepper, and garlic powder. Spread on the baking sheet.
  3. In another bowl, whisk together Dijon mustard and maple syrup.
  4. Place chicken breasts on the baking sheet with sweet potatoes, drizzling half of the sauce over the chicken.
  5. Roast for 25-30 minutes until chicken reaches 165°F (74°C) and sweet potatoes are golden brown.
  6. Slice chicken and assemble bowls by layering sweet potatoes first, then chicken topped with remaining sauce.
