  • 2 tsp chili powder
  • 2 tbsp olive oil (for sautéing)

Instructions

  1. Dice chicken breasts into bite-sized pieces and season with cumin and chili powder.
  2. Heat olive oil in a skillet over medium heat. Add onions and bell peppers; sauté until soft. Add seasoned chicken and cook until golden brown.
  3. Place a tortilla on a flat surface, sprinkle half with cheese, add a scoop of chicken mixture, fold it over.
  4. In the same skillet, cook folded quesadillas until golden brown on both sides (about 2-3 minutes each).
  5. Slice into triangles and serve warm with sour cream or salsa.
