- 1/4 cup unsalted butter
- 1/2 cup brown sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a saucepan, melt butter with brown sugar until bubbly; pour this mixture into each muffin cup.
- Place one pineapple ring on top of the butter-sugar layer in each muffin cup.
- In a bowl, whisk together flour, baking powder, and granulated sugar.
- In another bowl, combine eggs, milk, melted butter (cooled), and vanilla extract until smooth.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Spoon the batter over the pineapple rings and bake for 18-20 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before flipping onto a serving plate.
