  • 1 quart high-quality vanilla ice cream, softened
  • 1 store-bought pound cake or shortcake, cut into layers
  • 1 cup light whipped topping

Instructions

  1. Slice the pound cake into even layers using a serrated knife.
  2. Toss the sliced strawberries with sugar to release their juices.
  3. In a round springform pan, layer one piece of cake at the bottom. Spread half of the softened vanilla ice cream over it, followed by half of the strawberries.
  4. Repeat with another layer of cake, remaining ice cream, and strawberries. Finish with a final layer of cake on top.
  5. Cover tightly with plastic wrap and freeze for at least 4 hours until firm.
  6. Once frozen, remove from freezer and spread whipped topping generously on top. Optionally, add crushed strawberries or mint leaves for presentation.
