  • 2 medium russet potatoes (about 300g)
  • 4 medium flour tortillas
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 1 tsp garlic powder
  • ½ tsp cumin
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Prepare the potatoes: Peel and dice the russet potatoes into small cubes. Boil in salted water for 12-15 minutes until tender.
  2. Sauté onions: While the potatoes cook, heat 1 tablespoon of oil in a skillet over medium heat. Add diced onions and sauté until translucent.
  3. Mash the mixture: Drain the cooked potatoes and return them to the pot. Mash lightly with a fork, then mix in sautéed onions, garlic powder, cumin, salt, and pepper.
  4. Assemble quesadillas: Spread a generous portion of potato mixture on half of each tortilla and sprinkle with cheese before folding over.
  5. Cook quesadillas: Heat remaining oil in the skillet over medium heat. Cook each quesadilla for about 3-4 minutes per side until golden brown and crispy.
