Ingredients

  • 4 skinless salmon fillets (6 oz each)
  • 2 cups fresh baby spinach, chopped
  • 1 cup crumbled feta cheese
  • 3 garlic cloves, minced
  • 2 tbsp fresh lemon juice
  • 2 tbsp fresh dill or parsley, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. In a bowl, mix together spinach, feta, garlic, lemon juice, dill/parsley, salt, and pepper until combined.
  3. Place salmon fillets skin-side down and carefully slice pockets into the thickest part.
  4. Generously fill each pocket with the spinach-feta mixture.
  5. Arrange the filled salmon in the baking dish, drizzle with olive oil, and bake for 20-25 minutes until cooked through.
  6. Let rest for 5 minutes before serving; garnish as desired.
