  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar, divided
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large fresh Granny Smith apples, diced
  • 1 cup salted caramel sauce (store-bought or homemade)
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 3 large eggs
  • 2 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar until combined. Press into the bottom of a springform pan and bake for 8–10 minutes until golden.
  2. In a large bowl, blend cream cheese with remaining sugar until smooth. Add sour cream, vanilla extract, cinnamon, and nutmeg; mix well.
  3. Beat in eggs one at a time until just combined. Fold in diced apples coated with cinnamon and swirl half of the salted caramel into the batter.
  4. Pour over the baked crust and bake for 50–60 minutes until edges are set but center jiggles slightly. Cool at room temperature before refrigerating for at least four hours.
  5. Serve topped with remaining salted caramel.
