  • 14 oz firm tofu, pressed and cubed
  • 1 cup full-fat coconut milk
  • 4 tbsp vegan butter
  • 3 garlic cloves, minced
  • 1-inch ginger root, grated
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tbsp chili paste (adjust as per spice preference)
  • 2 tbsp fresh lemon juice
  • ¼ cup fresh cilantro, chopped (for garnish)

Instructions

  1. Press the firm tofu between paper towels to remove excess moisture and cut it into cubes.
  2. In a skillet over medium heat, melt the vegan butter. Add minced garlic and grated ginger, sautéing for about 2 minutes until fragrant.
  3. Stir in turmeric, cumin, paprika, and chili paste; cook for another 30 seconds before adding the coconut milk. Mix well.
  4. Gently fold in the tofu cubes and simmer for 10-15 minutes until heated through and the sauce thickens slightly.
  5. Once cooked, squeeze fresh lemon juice over the dish and sprinkle with chopped cilantro before serving.
