- 1 cup full-fat coconut milk
- 4 tbsp vegan butter
- 3 garlic cloves, minced
- 1-inch ginger root, grated
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 2 tbsp chili paste (adjust as per spice preference)
- 2 tbsp fresh lemon juice
- ¼ cup fresh cilantro, chopped (for garnish)
Instructions
- Press the firm tofu between paper towels to remove excess moisture and cut it into cubes.
- In a skillet over medium heat, melt the vegan butter. Add minced garlic and grated ginger, sautéing for about 2 minutes until fragrant.
- Stir in turmeric, cumin, paprika, and chili paste; cook for another 30 seconds before adding the coconut milk. Mix well.
- Gently fold in the tofu cubes and simmer for 10-15 minutes until heated through and the sauce thickens slightly.
